(Garlic Mashed Green Bananas)

What You’ll Need
2 ½ lbs Green Cooking Bananas (8 medium-sized bananas)
1 ½ cup Unsweetened Almond Milk (or non-dairy milk of choice: Rice Milk, Hemp Milk, Cashew Milk)
½ cup Vegetable Broth
4 tablespoons Soy-free Vegan Butter
6 cloves of Roasted Garlic (or 2 tbsp garlic powder)
1 tbsp Sea Salt
1 tsp Ground Black Pepper
1 tbsp All-purpose Seasoning
½ tsp Oregano
Optional Toppings:
Fresh Parsley
Coconut Bacon
Nutritional Yeast
Scallions
Cooking Instructions
Fill a large pot two-thirds full of water, add a pinch of sea salt, and bring the water to a boil over medium-high heat.
Cut off both ends of green banana and slit each banana lengthwise.
Add the bananas to the boiling water and boil for 20 mins or until bananas can easily be pierced with a fork.
While the bananas are boiling, heat the milk, butter, and broth in a saucepan.
Remove the bananas and slide the peels off.
Place peeled bananas in bowl, pour in heated milk mixture, spices, garlic, and mash until desired texture (or use potato ricer and then mash to desired texture)
Adjust with additional salt and pepper, or other spices and serve!
